In the world of high-hydration baking, time is the final ingredient. This loaf is "cellar-rested" to allow the honeyed sweetness of the sultanas to permeate the crumb, ensuring that every slice is consistently moist, deeply flavoured, and structurally perfect.
The Flavor Profile
The Fruit: Plump, sun-ripened sultanas provide bursts of honey-like sweetness. During the long ferment, these fruits hydrate the dough, creating a soft, tender interior.

The Crumb: Our signature "Long-Ferment" process develops a complex, slightly lactic tang that perfectly balances the natural sugars of the fruit.
The Bake: A thin, golden-brown crust yields to a remarkably open and moist crumb that has been allowed to "set" to perfection over 12 hours.
