Emmer, one of the earliest cultivated wheats, is a grain with roots that stretch back over 10,000 years. Its rich flavour, gentle nuttiness, and deep aroma reflect a slower rhythm of growing and baking - one that honours both the soil and the hands that shape the loaf.
At Baker on the Bay, we blend ancient grains with modern craft to create breads that balance nutrition, texture, and heritage. Each loaf in our Emmer Collection celebrates a different expression of this remarkable grain - from light and balanced to deeply rustic and full-bodied.
Our small-batch, slow-fermented process allows the grain’ s natural character to shine through, resulting in bread that tells a story of time, place, and craft.
